The Urban Wren

The Need:

This was a brand new venue and the owner's request was to define and develop a concept unique to the Greenville, SC, area, but also to reflect their personal vision. This was accomplished by taking into consideration current food trends, historical location, local demographics and factors. The project would entail keeping a clear and consistent brand message through complete oversight and direction from kitchen design and equipment layout through development of menus, interior design, staff training, and the culture of hospitality.

The Solution:

We imagined a "New Age Mod-Vintage Urban Winery, Eatery and Bar" to feature the on-site winery and tasting room and a restaurant where the wine would guide the flavors of the food. A place where everything – from the choice of ingredients to the last grain of salt – is created with the character of the wine as as starting point.

Wines are handcrafted in small batches and the wine list embraces both domestic and international gems. The offerings include modern interpretations of classic and global fare, crafted to pair with the wine as well as the extensive spirits and Bourbon collection. The concept of an approachable dining and wine experience will be the new heartbeat in Greenville's historic Markley Station.

  • Consultation and recommendation that aligned with the owner's goals to create a winning concept and stragegic plan for a successful launch.
  • Kitchen and restaurant design including floor plan and kitchen equipment.
  • Menu development that reflected the Urban Wren concept, guest demographics, local ingredients and specialties, and signature dishes.
  • Recruitment of executive chef with solid culinary skills and kitchen associates and waitstaff personnel.
  • Create SOPs, standard recipe cards with photos of completed dishes, cost of goods/percentages.
  • Source and suggest cost-effective smallwares to enhance the user experience.
